You are able to change a gallery styles on an individual product gallery basis.  

This can be done in the product gallery wizard.  

1. In “Edit" mode, click on the Pencil icon to Edit at the product gallery you are wishing to update

2. Go to Gallery Style 
3. Select Override the default styles for this gallery

4. Choose your preferred gallery settings
5. Click Finish
6. Save your changes to publish them
